If you've taken a introductory psychology course, you are aware of our taste buds, sensing sour, salt, bitter and sweet.  Japanese researchers have added a fifth taste, umami, roughly translated as "deliciousness," sensed by taste receptors that respond to glutamate.  Every single molecule that has been proven to stimulate these umami taste buds is present in bacon.


Bacon is an umami bomb.


I grew up on a hog farm and I knew this by instinct, but it's nice to have it confirmed by science.
