Someone I follow on Facebook just sent out a recipe for a Rhubard Custard Pie with Oatmeal Cookie Crust from this cookbook. Eye-balling the recipe, I think I can make it with gluten-free flour! Now I just need to find rhubarb.
The rest of the book is probably worth a look, so I've requested it from the public library.
With a long weekend coming right up, I hope this comes promptly!
